A second Subway location has reopened in Âé¶¹´«Ã½. The third is on the way.

The Subway location on Fleming Drive in Âé¶¹´«Ã½ reopened under new ownership in August.
Penny Hoover, who bought the three Âé¶¹´«Ã½ Subway locations after the restaurants abruptly closed in late June, said the 107 Independence Blvd. location beside of Tractor Supply opened midday on Monday.

The Burkemont Avenue Subway location in Âé¶¹´«Ã½ is expected to reopen soon. It was one of three Subway restaurants in Âé¶¹´«Ã½ that abruptly closed in late June.
The Subway location at 100 E. Fleming Drive in the Âé¶¹´«Ã½ Plaza shopping center reopened on Saturday, Aug. 9.
Hoover said there is still some work to be done at the 1255-A Burkemont Ave., Space 22, location. She said it appeared to be going through a remodel when it closed but the work wasn’t completed. Hoover hopes to get the location open as quickly as possible.
The locations will be open from 8:30 a.m. to 9:30 p.m. seven days a week, Hoover said.
The Âé¶¹´«Ã½ Subway restaurants were previously owned by William Parish when the locations closed. Parish was charged with nine misdemeanor counts of worthless checks after three Subway employees filed a report about payroll checks not being paid. The charges were dropped after employees were paid with money orders, according to Assistant District Attorney Mitch Walker.

Hoover, who lives in Denver, North Carolina, has worked with Subway for 33 years and owns other Subway locations in the Denver, Cornelius and Mooresville areas. At one time, she had 13 locations.
She travels Interstate 40 often when she is going back to her hometown Knoxville, Tennessee. Buying the three Subway locations in Âé¶¹´«Ã½ made sense, Hoover said.
“I closed three of my stores after COVID that just didn’t recover, and I was looking for something close to me that made sense, that could kind of help fill that gap, so to speak,†Hoover said.
As the three stores get going, Hoover is hoping customers will have patience and grace for the employees, many of whom are new on the job.
“We’re absolutely going to make mistakes, and they’re learning, and they’re not maybe the fastest at making the sandwiches right now, but I know the guests that have been coming into (the Fleming Drive location) have been awesome,†Hoover said. “They’ve been super patient and so excited to see us open. It’s been really actually fun to see.â€
Hoover said she plans to remodel all three Âé¶¹´«Ã½ stores within the next year.
She wants to bring the Subway name back to what it should be in Âé¶¹´«Ã½.
She said she and her husband, who grew up in the Vale community in Lincoln County, are outdoorsy people and look forward to exploring hikes and parks in Burke County.
